Chef Ana will be demonstrating a non-yeasted dough, called yufka, similar to a very stretchy tortilla. This is the dough we prepare at Sofra for all of our stuffed flatbreads. We stuff them with vegetable or meat fillings and carefully fold, roll, layer, and assemble so that the result is a perfect ration of flavored bread, condiments, vegetables, and/or meat. Chef Ana will be working from her cookbook, Soframiz and making signature items like lamb and pistachio katmer, red lentil durum, za’atar and labne manoushe, and walnut hummus.

All of our cooking classes are held in our Allston location and are demonstration-style. Our chefs will do the cooking and baking and you will get to do the eating and drinking—and we'll send you home with all of the recipes from class!
