Living in the Boston area means we are lucky enough to experience very fresh fish and shellfish all year long! Join Chef Ana Sortun for tips on buying and preparing fish and brush up on cooking methods like roasting, searing, caramelizing, cooking in parchment, stuffing and braising. Take seafood dishes to a new level with a few Oleana specialties like: Halibut in parchment with brussels sprout tabouleh & spicy walnut sauce; Caramelized scallops with Egyptian-style garlic sauce and sprouted lentils; Flounder roulade with crab and leek saganaki; and Atlantic merluza with simit crumb and baba ganoush. Take the plunge into this exciting sea of recipes and gain kitchen confidence in your future fish preparations!
